PREHEAT oil in deep fryer to 350° F. COAT the Catfish strips with the spices and lime and marinate for 10 minutes.
MIX water and flour together to make a thick slurry paste. PLACE a tortilla on a cutting board, put one strip of Catfish at the bottom of the tortilla and smear the top with the slurry mixture.
ROLL from bottom to top, letting the slurry hold the roll closed.
REPEAT with remaining Catfish and tortillas. When putting the roll into the fryer hold under the oil with metal tongs for 15 seconds to make sure it won’t unroll.
Continue to COOK for 5-6 minutes until golden brown.
REMOVE and drain on paper towel. SERVE with your favorite toppings and dipping sauces.
