Catfish Lettuce Wraps

What you’ll need:

  • 3 U.S. Farm-Raised Catfish fillets, cut into large chunks
  • 2 garlic cloves, minced
  • ¼ cup hoisin sauce
  • 2 tbsp soy sauce
  • 2 tbsp seasoned rice wine vinegar
  • 1 tbsp grated ginger
  • Kosher salt and black pepper to taste
  • 1 tbsp olive oil
  • 1 onion, finely diced
  • 1- 8 oz can water chestnuts, drained and diced
  • 1 head butter lettuce, separated out into leaves
  • 2 green onions, thinly sliced

How to prepare:

WHISK garlic, hoisin sauce, soy sauce, seasoned rice wine vinegar, ginger, salt and pepper in a large bowl.

ADD Catfish to mixture and marinate for 10 minutes.

While the Catfish is marinating, HEAT oil in a nonstick pan over medium-high heat.

ADD onions and water chestnuts.

COOK for 7 minutes.

REMOVE Catfish from the marinade and place in pan.

COOK for 5 minutes.

FLIP and cook an additional 7 minutes or until Catfish is cooked through.

SPOON into lettuce boats and GARNISH with green onion.
