What you’ll need:

  • 4 U.S. Farm-Raised Catfish fillets, cut into large chunk
  • 3 eggs
  • 1 tsp baking soda
  • 1 cup buttermilk
  • 1 tbsp lemon juice
  • 1 cup all-purpose flour
  • ½ cup cornstarch
  • 1 tbsp garlic powder
  • 1 tsp kosher salt
  • Vegetable oil for frying
  • SAUCE
  • 1 cup mayonnaise
  • ¼ cup ketchup
  • 3 tbsp sweet chili sauce
  • 1 tbsp sriracha
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp honey
  • Salt and pepper to taste

How to prepare:

COMBINE all sauce ingredients in a bowl.

WHISK together until combined.

PREPARE the batter by combining eggs, baking soda, buttermilk, lemon juice, flour, cornstarch, garlic powder and kosher salt in a large bowl.

WHISK together until combined.

HEAT oil in a fryer to 380° F.

DIP Catfish chunks into batter and place in fryer.

COOK 5 minutes or until golden brown.

TOSS fried Catfish with sauce and serve with toothpicks.
