Black Pepper Fried Catfish Club

What you’ll need:

  • 2 U.S. Farm-Raised Catfish fillets
  • Vegetable oil for frying
  • ½ cup all-purpose flour
  • 1 ½ cups cornmeal
  • 2 tbsp fresh ground black pepper
  • 1 tsp salt
  • 1 tsp garlic powder
  • SANDWICH
  • 6 slices white bread, toasted
  • Lettuce
  • 4 slices bacon, cooked
  • 1 medium tomato, sliced
  • 2 slices cheddar cheese
  • Mayonnaise
  • 2 slices ham
  • 2 slices turkey
  • 2 slices Swiss cheese
  • Potato chips
  • Dill pickle spears

How to prepare:

HEAT oil in deep fryer to 380° F.

MIX flour, cornmeal and seasonings in a shallow bowl.

COAT Catfish in the mixture.

PLACE Catfish in fryer and COOK for 6 minutes or until golden brown.

PLACE on a paper towel lined plate to cool slightly before assembling sandwich.

On a toasted slice of bread, LAYER Catfish, lettuce, bacon, tomato slice and cheddar cheese.

SPREAD mayonnaise on both sides of another slice of bread.

PLACE on top of the cheddar cheese, then add ham and turkey, lettuce, tomato slices and Swiss cheese.

TOP with one last slice of toasted bread. PLACE 4 long toothpicks in the corners of the sandwich, then cut into quarters.

SERVE with potato chips and pickles.
