Buffalo Catfish Sliders

What you’ll need:

  • 4 U.S. Farm-Raised Catfish filets, cut in thirds
  • ¾ cup buttermilk
  • 2 tsp hot sauce
  • 1 tsp salt
  • 1 ¼ cups cornmeal
  • ½ tsp salt, garlic powder, and onion powder
  • ¼ tsp cayenne pepper
  • 12 Hawaiian-style rolls
  • ½ cup buffalo sauce
  • Ranch dressing
  • Sliced pickles
  • Melted butter combined with salt, garlic powder, and chopped parsley

How to prepare:

Marinate Catfish in buttermilk mixture while you prepare the breading and heat the oil.

Combine cornmeal and spices in a gallon Ziploc bag. 

Remove excess liquid and coat U.S. Farm-Raised Catfish in the cornmeal in batches. 

Heat oil to 350°F and fry the fish for 3-5 minutes until golden brown.

Slice the Hawaiian rolls in half without pulling them apart, top with fried fish, buffalo sauce, ranch dressing, sliced pickles, and provolone cheese. 

Replace the tops of the rolls, brush with garlic butter, and bake for about 15 minutes until golden and melty.
