Catfish Caesar Wraps

What you’ll need:

  • 4 U.S. Farm-Raised Catfish fillets, sliced into strips
  • ½ cup flour
  • ½ cup cornstarch
  • 2 tbsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 1 head romaine lettuce
  • 4 slices bacon, cooked and crumbled
  • 1/3 cup parmesan cheese, shredded
  • 1/3 cup cherry tomatoes, cut in half
  • 1/3 cup croutons
  • 1/3 cup Caesar dressing of your choice
  • 4 large flour tortilla wraps
  • Vegetable oil

How to prepare:

Heat vegetable oil in deep fryer to 350°F.

Combine dry ingredients in a large bowl and mix well.

Coat Catfish strips in flour coating and shake off any excess.

Place into fryer and cook for 5 minutes or until coating is golden brown.

Let cool slightly on a wire rack.

Combine lettuce and remaining ingredients in a large bowl and toss with Caesar dressing to coat.

Place lettuce mixture on flour tortilla and add 3 Catfish strips.

Fold over the top and edges of tortilla and wrap into a burrito shape.
