Catfish Corndogs with Pepper Jelly

What you’ll need:

  • 2 U.S. Farm-Raised Catfish fillets, cut into 2" x ½" strips
  • ¾ cup yellow cornmeal
  • ¾ cup flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • 1 tsp sugar
  • ½ tsp salt
  • 2 eggs
  • Vegetable oil
  • Wooden sticks
  • PEPPER JELLY:
  • 1 cup tricolor peppers, finely diced
  • ½ cup sugar
  • ½ cup vinegar
  • ½ cup water
  • Hot sauce (optional)

How to prepare:

Heat vegetable oil in deep fryer to 365°F.

Skewer Catfish strips with wooden sticks and set aside.

Combine remaining ingredients in a large bowl and mix well.

Dip Catfish into batter and place into fryer.

Cook for 3-5 minutes or until coating is golden brown and Catfish is cooked through.

Combine all pepper jelly ingredients in a small saucepan and cook on medium for about 30 minutes until thick and bubbly.

Add hot sauce for an extra kick if desired.
