Serving Size: Makes 10 Egg Rolls
★Save RecipePREP your ingredients by cutting the catfish into small pieces and finely chopping the bell pepper and onion. In a large skillet, MELT butter and ADD bell pepper, onion, and minced garlic. SAUTE until bell pepper and onion are softened.
ADD in the U.S Farm-Raised Catfish and season with salt, cajun seasoning, paprika, and red pepper flakes. STIR seasoning until the catfish is well coated. ADD in cream cheese and stir in until melted. POUR in heavy cream and stir until well combined.
COOK on medium/high heat for an additional 5-7 minutes. Once the mixture is bubbling, REMOVE the mixture from heat and add it to a heat-safe mixing bowl. ADD the cheddar cheese to the catfish mixture and stir in until the cheese is melted. Once well combined, set aside.
In a small bowl, COMBINE 1 egg and 1 tbsp of water and mix well. To PREPARE the egg rolls, lay the egg roll wrapper flat and brush the perimeter with the egg and water mixture. ADD 2 tbsp of the mixture into each egg roll wrapper and wrap tightly, being sure to seal the bottom with more of the egg and water mixture.
PREHEAT your air fryer to 400° F. BRUSH the top of the egg rolls with the rest of the egg and water mixture. SPRAY the air fryer basket with non-stick spray and place the egg rolls in the air fryer bottom side facing up, ensuring that they aren’t touching. SPRAY the egg rolls with the non-stick spray and cook 5 minutes at 400° F.
Once done, FLIP the egg rolls, spray the tops again with non-stick spray. COOK for an additional 3 minutes until golden brown. Using tongs, REMOVE the egg rolls from the air fryer and let rest for at least 10 minutes. Enjoy!
