Catfish Spinach and Artichoke Bites

What you’ll need:

  • 3 Catfish filets
  • 1 tablespoon Cajun seasoning
  • 10-ounce bag of chopped frozen spinach, thawed
  • 7-ounces artichoke hearts, chopped
  • 2 garlic cloves, minced
  • 4-ounces cream cheese, softened
  • ¼ cup sour cream
  • ½ cup shredded mozarella cheese
  • ¼ cup shredded parmesan cheese
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon crushed red pepper
  • Salt and black pepper, to taste
  • 1 sheet of puff pastry dough, thawed

How to prepare:

Preheat your oven to 375°F.

Rinse U.S. Farm-Raised Catfish fillets and pat them dry with paper towels.

Drizzle each fillet with olive oil and season the fish on both sides with Cajun seasoning.

Bake the fillets in the preheated oven for 15 minutes. Meanwhile, in a medium mixing bowl combine the thawed spinach, artichoke hearts, garlic cloves, cream cheese, sour cream, mozzarella cheese, Parmesan cheese, onion powder, garlic powder, salt, black pepper, and crushed red pepper.

Spray a mini muffin tin with nonstick baking spray. Unroll the puff pastry dough onto a cutting board and use a pizza cutter to cut it into 24 even-sized squares. Place the puff pastry squares in the mini muffin tin and gently press them down into the cups.

Flake the U.S. Farm-Raised Catfish with a fork and add two of the fillets to the spinach and artichoke mixture. Gently fold the Catfish into the spinach mixture.

Fill each muffin cup with about 1 ½ teaspoons of spinach and artichoke dip.

Tap each muffin cup with a couple pieces of flaked U.S. Farm-Raised Catfish.

Bake the spinach and artichoke dip cups for 25 to 30 minutes or until golden brown and bubbly. Enjoy.
