Charlie’s Roasted Delacata with Compound Butter

What you’ll need:

  • 2 U.S. Farm-Raised Delacata (Catfish fillets, 7-9 oz)
  • Salt and pepper to taste
  • 1 tbsp vegetable oil
  • COMPOUND BUTTER
  • 4 cloves garlic, crushed
  • 2 tbsp olive oil
  • ½ medium red onion, minced
  • 1 stick salted butter, softened
  • 1 tsp kosher salt
  • 1 tsp fresh ground black pepper

How to prepare:

PREHEAT the oven to 425° F. PLACE a medium-sized skillet in the oven for 10 minutes to heat. SPRINKLE the Delacata with salt and pepper. Remove the hot skillet from the oven and add oil. ADD the Delacata to the hot oil presentation side up. PLACE on the top rack of the oven and roast for 12 minutes or until done. For the Compound Butter, PREHEAT the oven to 350° F. PLACE garlic in a small pan with the oil and roast for 15 minutes or until soft. REMOVE and allow to cool. COMBINE the roasted garlic and remaining ingredients in a food processor. PULSE until smooth. This step can be done ahead of time. Store in refrigerator in an airtight container for up to 2 weeks.
