Italian Catfish with Pasta and Grape Tomatoes

What you’ll need:

  • 2 U.S. Farm-Raised Catfish fillets
  • 1 tbsp dried Italian seasoning
  • 8 oz dried linguini
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • ¼ cup white wine
  • 3 tbsp butter
  • ½ cup grape tomatoes, halved
  • ½ cup fresh mozzarella balls
  • Salt and pepper to taste
  • 6 basil leaves, thinly sliced

How to prepare:

PREHEAT the oven to 425° F.

SPRINKLE Catfish with Italian seasoning.

BAKE for 20 minutes.

COOK linguini according to package directions.

HEAT a skillet over medium heat.

ADD oil and garlic and cook for 3 minutes.

DEGLAZE with white wine.

ADD cooked pasta and toss to coat.

REMOVE from heat and add butter.

Once melted, ADD tomatoes, mozzarella, salt and pepper and toss to coat.

SERVE baked Catfish over linguini and GARNISH with fresh basil.
