Cajun Catfish Cakes Sandwich

What you’ll need:

  • 3 U.S. Farm-Raised Catfish fillets, cooked and flaked
  • ½ cup remoulade sauce
  • 1 lemon, juiced
  • 1 egg, beaten
  • ½ tsp Cajun seasoning
  • 1 cup Panko bread crumbs
  • 3 tbsp oil
  • 4 brioche buns
  • Lettuce
  • Tomato
  • Remoulade:
  • ½ small red onion, finely diced
  • 1 cup mayonnaise
  • ¼ cup Creole mustard
  • 2 tbsp capers
  • 1 tbsp blackening spice
  • 1 tbsp hot sauce
  • 2 lemons, zested and juiced

How to prepare:

Combine ingredients for remoulade and mix well. In a large bowl, combine ½ cup remoulade, lemon, egg and seasoning and mix well.

Add Catfish and Panko bread crumbs.

Form into 4 patties and set aside. Heat a large nonstick skillet with oil over medium high heat.

Add patties and cook for 4 minutes, then flip.

Cook for 5 more minutes or until the patty is heated and cooked thoroughly and golden brown.

Serve on a brioche bun with lettuce, tomato and remoulade sauce.
