Lime & Coconut Catfish Skewers

What you’ll need:

  • 4 U.S. Farm-Raised Catfish fillets, cut into larger chunks
  • 1 cup coconut milk
  • ¼ cup olive oil
  • 2 limes, zested and juiced
  • 1 tbsp honey
  • 1 tsp crushed red pepper flakes
  • ½ tsp salt
  • 4 (8-inch) skewers
  • Fresh cilantro and lime wedges for garnish

How to prepare:

Combine marinade ingredients in a bowl.

Reserve ⅓ cup of marinade to use later.

Place Catfish chunks in bowl with marinade and let rest for 30 minutes.

Preheat air fryer to 400°F.

Place Catfish onto skewers so they are touching but not too tightly.

Cook for 15 minutes. Remove from air fryer and drizzle with remaining marinade.

Garnish with chopped cilantro and wedges of lime.
