Potato-Crusted Catfish

What you’ll need:

  • 4 U.S. Farm-Raised Catfish fillets
  • 1 tablespoon olive oil
  • 1⁄2 teaspoon kosher salt
  • 1⁄2 teaspoon freshly ground black pepper
  • 1 bag assorted-color new potatoes, sliced thin

How to prepare:

PREHEAT oven to 400° F.

DRIZZLE Catfish fillets with olive oil, and season with salt and pepper.

PLACE fillets on a baking sheet. Layer sliced potatoes on fillet, slightly overlapping with alternating colors.

BRUSH potato-crusted fillet with olive oil, and sprinkle with kosher salt.

BAKE uncovered in oven for 15 minutes.
